This recipe here is so EASY, I guess you could says its as easy as… well, PIE 😉 Frozen Coconut Cream Pie to be exact.
This is the kind of recipe you need to make when you forgot you volunteered to bring dessert to your neighbor’s barbecue, and it starts in 20 minutes!
All you need to make this simple dish are three “shortcut” ingredients, a freezer, and a bowl to mix it all together. It’s a piece of cake! (Or…pie?)
I first had the idea for this super duper easy Frozen Coconut Cream Pie on a warm summer day with one of my best friends, who happens to be vegan as well. We were talking about easy plant based desserts and our obsession with Coco Whip, (a key ingredient in this recipe) and how we love spreading it on everything imaginable.
Coco Whip is a delectable plant-based “cool-whip” type of substitute that uses a base of coconuts (instead of dairy) to achieve a creamy texture. The idea of mixing Coco Whip plus actual coconut shreds popped into my head at that time long ago, and here today it’s FINALLY come into fruition in pie form!
Lisa Kitahara is also an inspiration for this recipe- she always shares her yummy looking desserts and recipes on her Instagram stories (YUM).

- Light & Refreshing
- Done in under 10 minutes (actually only took me 6 minutes)
- Only uses 3 ingredients
- Easy to make in a pinch
