Easy Portabella Fajitas
These portabella fajitas are deliciously easy way to get your veggies in! Serve them with brown rice and avocado for a perfect, simple meal.
  1. Preheat oven to 420 degrees and slice all of the vegetables to be about a quarter of an inch thick. In a large bowl, toss the vegetables gently with the vegetable broth and seasoning till evenly coated.
  2. Add the veggies to a cast iron pan, pouring the excess broth over the top of the vegetables. Place the pan into the oven and let cook for 25 minutes.
  3. After 25 minutes, add a few more tablespoons of broth to the pan and stir gently. Place in oven for another 25 minutes. Repeat this broth “pour over” process once more, and allow fajitas to cook for 5-10 more minutes until completely done cooking. Enjoy!
