Cocoa Cashew Energy Balls
Chocolatey, fudgy balls perfect for a snack or dessert.
  1. Place all ingredients in food processor or high speed blender and blend on high. Scrape down the sides of the machine and blend again until a sticky mixture forms. If your dates are not moist enough, you may need to add a couple of teaspoons of water to get a mixture that’s sticky enough to roll into balls.
  2. Roll dough into balls 2 tablespoons in size (Mine made about 9 balls). Roll balls in extra cocoa/ cacao powder if desired. Store in refrigerator or freezer for up to 10 days.

*If your dates are tough, soak them in warm water for at least 10 minutes before blending.
