Almond Bliss Energy Bites
These 6 ingredient energy bites are the perfect sweet blend of chewy and chunky! They’re the perfect snack for anytime with a fun, almond flavor.

  1. If your dates are not already soft, soak them in warm water for 10-15 minutes until they are soft. Drain them from water and dump into a food processor or a high speed blender with vanilla extract, almond extract, and salt. Blend until well processed.
  2. Add in almonds and oats. Pulse two or three times, then blend on high for at least a minute. Stir in any optional add ins by hand.
  3. Using a measuring spoon, ball out each “ball” into two-tablespoon sized servings and shape into balls. Roll balls in coconut flour and add additional almonds on top. Store in fridge for up to 8 days or in freezer for up to 2 months. Enjoy!
Recipe Notes

*Optional, but it really intensifies the flavor. I would recommend using it if you have it one hand.

**Use gluten free oats to make recipe gluten free.

***My mom REALLY thought chocolate chips would taste good in this, so I added some in to half the batch for her. They tasted GREAT! I would also recommend dried fruit (like cherries, apricot, or coconut).

****Can sub with almond flour, oat flour, or powdered sugar.
