These comforting, subtly garlic-y, rosemary infused white beans are the time-minimalist/taste-lover’s dream! Made in about 10 minutes (using canned white beans as a shortcut), they’re the perfect fiber and protein-packed addition to a healthy dinner or as a part of weekly meal prep.
I’m not going to lie to you, friends— these beans were born when I had literally no idea what to eat for dinner last night. I was about to eat roasted asparagus and kale with hummus… that’s it.
As someone who had merely eaten a vegan carrot cake muffin, a (darn delicious) gala apple, and a cup of coffee throughout the entirety of the day, I was NOT about to have veggies and hummus alone for my final meal. Thankfully, I channeled my inner Caitlin (From My Bowl), put on some jammin’ tunes and got legume-ing!
Using canned beans as a shortcut allows this recipe to be done in about 10 minutes! Plus, the warm spices used make it perfect for the fall and winter.
You could even serve this as a white bean dip to a crowd! Alternatively, add an extra cup of broth or two and create a warming white bean soup. Whatever way you enjoy this health-ified comfort food, I highly recommend grabbing a glass of apple cider first.

Quick Rosemary Garlic White Beans
A quick, easy recipe for comforting white beans. Perfect for fall and winter!
- 1 can white beans (drained & rinsed)
- 1/4 diced onion (I used red)
- 2 cloves minced garlic
- 1 cup vegetable broth or water
- 1 tsp rosemary
- 1/2 tsp salt
- black pepper (optional, to taste)
Add all ingredients to a pot and turn heat on high. Once boiling, turn heat to medium and let liquid boil off until only a small amount remains and desired consistency is reached. Enjoy!
