It’s that time of year again where anyone and everyone that looks like they might be of qualifying age gets the question: “When do you go back to school?”
I myself, am not yet immune to this question. Just because college may be more ~advanced~ form of education does not, in fact, mean that I’m without those very same first day jitters, wondering which one of my professors will be the grouchy one (Fingers crossed I get lucky this semester and don’t get one of those!).
Back-to-school season reminds me of classic lunchbox and snack favorites. My mom taught me one of my favorite-to-date combos: PEANUT BUTTER and BANANA. I decided to combine these two epic ingredients today to make these marvelous Peanut Butter Banana Snack Balls. This one’s for you, mom.
Those who know me well know that sometimes I have a problem with putting too much on my plate (not in the literal sense, in this case 😉 ). It’ll be the middle of the semester and all of the sudden I have three club meetings to be at, but I also have work in 10 minutes, and two midterms the next day.
It’s times like these oh-my-goodness-my-hair-is-falling-out-I’m-so-stressed when I need easy, grab-and-go foods like these Peanut Butter Banana Snack Balls. This is why I have half the batch stored in an airtight bag in the depths of my freezer for when I know this time inevitably comes. (Thank you, future Courtney!)
Speaking to the details of these babies, they’re made from super healthy ingredients, so you can be rest assured that whoever you’re making them for is going to be well nourished. Better yet, they even taste good (!) which is key when making healthy things.

Peanut Butter Banana Snack Balls
A yummy and healthy snack wonderful for kiddos and adults alike! The perfect, peanut-butter-y addition to lunchboxes or for after school/work munchies.
- 1 cup packed dates (soaked in warm water for 15 minutes if tough)
- 3 tbsp peanut butter
- 1 medium banana
- 3/4 tsp salt
- 1 tsp vanilla extract
- 2 tbsp water
- 2 tbsp ground flaxseed
- 2 1/4 cup oats (divided into 1 1/2 cup and 3/4 cup)
- 3/4 cup roasted and unsalted peanuts (divided into 1/2 cup and 1/4 cup)*
In a food processor or high speed blender, blend dates to chop them apart. Add peanut butter, banana, salt, vanilla extract, and water. Blend on high till the mixture is smooth and well combined, taking care to scrape down the sides.
Add 1 1/2 cups of oats to the blender and 1/2 cup of peanuts. Blend on low until incorporated.
Dump sticky mixture into a medium sized bowl. Add remaining 3/4 cup of oats and 1/4 cup of peanuts and stir in with a spatula till a roll-able dough forms.
Roll dough into balls about 2.5 tablespoons in size. Place them (covered) in the fridge or freezer to be stored. Enjoy!
