I love thins recipe because as long as you’ve got the spaghetti squash prepped ahead of time, it takes a whopping 5 MINUTES to make! Plus, you can really customize to add any veggies you have on hand.

Mexican Bean Salad Stuffed Spaghetti Squash
- 1/3 avocado
- dash paprika
- 1/4 tsp salt
- 1/4 tsp cumin
- 1/2 lime juice
- 1/2 bell pepper, diced (or 3 mini bell peppers)
- 2 tbsp corn
- 1 tbsp red onion, diced
- 1/2 cup beans I used mixed
- mixed greens (optional)
- 1/2 pre-cooked spaghetti squash (seeds removed)
Mash avocado with lime juice and spices. Add diced vegetables and beans and mix till thoroughly coated.
Lay greens in the center of the spaghetti squash. Spoon bean salad on top of the greens to pack them in. Enjoy!
