If I could describe myself in one word, well… I can’t. If I was allowed to use multiple words, however, one of those words would definitely be CHOCOHOLIC.
My relationship with chocolate is a long one (and one I hope to never end). In fact when I was about five years old, I used to hide behind the couch in my family’s living room and sneak chocolate kisses from their bowl by the couch. I also used the bright white curtains behind said couch to wipe my messy face of all the chocolate once I was done. Whoops… sorry mom!!
Needless to say, my chocolate tastes have evolved since then. They’ve also taken a healthy spin. Not to fret, though, because taste hasn’t been compromised.
These cocoa cashew balls are a rich, fudgy bite with the perfect sweet-to-chocolate ratio, and remind me of a super fudgy brownie!
These energy bites, aka bliss balls (whatever you wanna call em’) are great make-ahead snacks to have in your fridge throughout the week, travel super well, and can be frozen/ rethawed to enjoy whenever. Plus, you probably have all the ingredients to make them at home already. What are you waiting for?!
Finally, If you end up making this I’d love to see your recreations or hear how it went in the comments below! Be sure to tag me on Instagram @cookwithcourt and #cookwithcourt to share!
Cocoa Cashew Energy Balls
- 1 cup cashews
- 3/4 cup packed dates *
- 1/2 cup oats
- 1/4 cup cocoa or cacao powder (plus more for rolling, if desired)
- 1/2 tsp salt
Place all ingredients in food processor or high speed blender and blend on high. Scrape down the sides of the machine and blend again until a sticky mixture forms. If your dates are not moist enough, you may need to add a couple of teaspoons of water to get a mixture that's sticky enough to roll into balls.
Roll dough into balls 2 tablespoons in size (Mine made about 9 balls). Roll balls in extra cocoa/ cacao powder if desired. Store in refrigerator or freezer for up to 10 days.
