When smoothie bowls are too much of a hassle, fruity overnight oats are a perfect, fresh-and-cool health-minded breakfast to shovel in your mouth before running out the door!
I made these overnight oats before a busy week of meetings, planning, and smashing the patriarchy (like always). Right now I’m loving the book “Reinventing Eden“… it’s totally mind-blowing! In my “Environmental Ethics” class I’m writing a piece about the intersection of women and the environment, and the book gives so much insight… 10000% recommend! I promise I’ll post the essay on this site under the “Sustainability” tab when I’m done!
BUT, in truth, I filled most of my times this week with activities that did not involve reading or essays… but rather non-academic endeavors (sorry, mom). But, it’s also why I prepared in advancewith meal-prepped breakfasts!
I was a bit of a busier bee this past week because I got appointed to be the Sustainability Commissioner for my school’s Sustainability Commission— also known as Green Love! My brain has been up to the brim with ideas and plans lately… and my schedule has been full of meetings and things-to-do!
I’m grateful for acai, berries, oats, and flaxseed for truly being there when I need them most. This “overnight oats” idea might sound like a big ol’, “HUH?!” upon first hearing the concept… but I promise, it’s simple!
What are Overnight Oats?
Overnight oats are a NO COOK dish, where oats and other dry additives absorb liquid-y ingredients over a number of hours (typically overnight)— to create a lovely breakfast to wake up to! But, I’ll admit— I did enjoy these berry-delish oats a time or two for dessert 😉 .
Making this dish into a plant-based one is almost inherent, as many recipes use flaxseeds, plant-based milk, and fruit. As a note to some recipes that include yogurt— there are easy substitutions! Applesauce, dairy-free yogurt, mashed banana, or even extra flaxseed + water can work in it’s stead. Overnight oats recipes are usually very forgiving, so feel free to play around with what you think might taste yummy!

Acai-Berry Overnight Oats (gluten-free)
Made in a large batch that’s perfect for meal prep— these gluten-free overnight oats are the perfect high-fiber, healthy breakfast to make ahead for your busy week!
- 2 cups rolled oats *
- 1/4 cup ground flaxseed **
- 2 tbsp psyllium husks ***
- 1 packet frozen acai
- 2 cups blueberries (I used frozen)
- 2 cups strawberries sliced or mashed (I used frozen)
- 3 cups unsweetened plant-based milk (I used almond)
- 2 tsp vanilla extract (optional, but recommended)
- seeds (optional, for topping)
If using frozen ingredients, add to a large bowl and let thaw or microwave. Add all other ingredients to bowl.
Stir or shake ingredients until well combined. Leave in fridge overnight. Enjoy!
* Use certified gluten-free oats if strict allergy.
** May substitute with chia seed if desired.
*** Psyllium husks provide additional fiber. They may be substituted with additional ground flaxseeds or chia seeds.
